Chocolate Cake with ganache topping

Ingredientes:

  • 1 cup of butter (at room temperature)
  • 2 cups of sugar
  • 3 eggs
  • 1 cup of milk
  • 2 ½ cups of all-purpose flour (350g)
  • 1 cup of cocoa powder (120g)
  • 1 tablespoon of baking powder
  • 1 teaspoon of vanilla extract
  • 200g of dark chocolate
  • ½ cup of heavy cream (120ml)

Preparação: 

  1. Preheat the oven to 180°C (350°F) and grease a Bundt cake pan with butter and flour. In a mixer, beat the butter with the sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Incorporate the vanilla extract and mix.

  2. Alternate adding the milk and the dry ingredients (flour, cocoa, and baking powder) sifted, starting and ending with the flour mixture. Beat until the batter is smooth.

  3. Pour the batter into the prepared pan and level it with a spatula. Bake for about 45-50 minutes or until a toothpick inserted into the center of the cake comes out clean. Remove from the oven and let the cake cool in the pan for about 10 minutes before unmolding.

  4. Chop the dark chocolate and place it in a heatproof bowl. Heat the cream in a saucepan until it begins to simmer. Pour the hot cream over the chopped chocolate and let it rest for 2 minutes.

  5. Stir well until the chocolate is completely melted and the mixture is smooth and shiny. Allow the ganache to cool slightly before pouring over the cake so it doesn't drip excessively. Pour the ganache over the cooled cake, letting it flow naturally over the sides.
