Ingredients:

• 1 whole chicken
• 1 kg of small potatoes
• Sliced bacon to taste
• Approximately 6 tablespoons of olive oil (or enough to evenly coat the chicken and potatoes)

Preparation:

1. Prepare the Chicken: Preheat the oven to 200°C. Season the chicken with salt, pepper, and a generous touch of olive oil. About 3 tablespoons should be enough to massage the entire chicken and ensure it stays juicy.
   
   
2. Prepare the Potatoes: The potatoes are little treasures in this dish. Wash them well and, if they're larger, cut them in half to ensure they become soft inside and crispy on the outside. Season the potatoes with salt, pepper, and a few generous tablespoons of olive oil.
   
   
3. Assemble the Dish: Place the chicken in the center, and arrange the potatoes around it. To add an extra touch of flavor, place a few slices of bacon over the chicken breast. You don't need to cover it completely, just enough to ensure a crispy and flavorful touch.
   
   
4. Roast: Place the tray in the oven for about 1.5 hours, until the chicken is golden and juicy, and the potatoes are irresistibly crispy on the outside and tender on the inside. If you want to ensure everything is even more flavorful and browned, drizzle a little extra olive oil over the chicken and potatoes about 30 minutes before the cooking time is up. This will guarantee an even more beautiful golden color and better flavor.
   
   
5. Serve: Remove the chicken and potatoes from the oven and let them rest. Ten minutes should be enough to allow all the flavors to redistribute. Serve and garnish with fresh rosemary, if desired. A green touch always adds something special to any dish.
